Avocado Cucumber Soup

Serves 6-8

The Ingredients:

  • 2 cucumbers
  • 3-4 ripe avocados
  • 32 oz chicken broth
  • ½ cup plain yogurt/sour cream
  • ½ chopped onion/1 bunch chopped scallions
  • 1 clove garlic
  • handful of cilantro leaves (separate leaves from the stems which tend to be bitter)
  • juice of 2-3 limes/lemons

 

The Seasoning:

  • salt and pepper
  • hot sauce/tobasco

 

The Garnish:

  • cilantro leaves
  • chile-lime flavored tortilla chips (These are preferable, but any tortilla chip will do the job)

 

The Preparation:

  • Peel cucumbers, remove seeds (optional), and cut into large chunks.
  • Chop onions/scallions and garlic
  • Separate cilantro leaves from stems.
  • Put these ingredients in a blender/cuisinart and puree.
  • Add chicken broth in small doses so that the mixture remains liquid.
  • Scoop avocados out of their shells and add to blender. Puree.
  • Add yogurt, lime juice, salt, pepper, hot sauce. Puree.
  • Continue to add chicken broth in small doses until you are pleased with the consistency.
  • Adjust the seasonings.
  • (Refrigerate.)
  • Garnish and serve.
