Avocado Cucumber Soup
Serves 6-8The Ingredients:
- 2 cucumbers
- 3-4 ripe avocados
- 32 oz chicken broth
- ½ cup plain yogurt/sour cream
- ½ chopped onion/1 bunch chopped scallions
- 1 clove garlic
- handful of cilantro leaves (separate leaves from the stems which tend to be bitter)
- juice of 2-3 limes/lemons
The Seasoning:
- salt and pepper
- hot sauce/tobasco
The Garnish:
- cilantro leaves
- chile-lime flavored tortilla chips (These are preferable, but any tortilla chip will do the job)
The Preparation:
- Peel cucumbers, remove seeds (optional), and cut into large chunks.
- Chop onions/scallions and garlic
- Separate cilantro leaves from stems.
- Put these ingredients in a blender/cuisinart and puree.
- Add chicken broth in small doses so that the mixture remains liquid.
- Scoop avocados out of their shells and add to blender. Puree.
- Add yogurt, lime juice, salt, pepper, hot sauce. Puree.
- Continue to add chicken broth in small doses until you are pleased with the consistency.
- Adjust the seasonings.
- (Refrigerate.)
- Garnish and serve.
